Me & McGee Market has a very close relationship with Lake in the Willows Apiary. The relationship started due to the close proximity of our place and Scott, Arkansas. The owners, Desmond and Joyce Simmons, focus on exceeding expectations and producing top of the line honey and honey products.
Creamed Honey is an ultra-popular product and with Joyce’s twist, it’s very tasty! The process to make Creamed Honey allows for a uniform formation of small crystals. You may have seen raw honey that has gotten cold form large crystals and the honey sets up into almost a solid. This will not happen with creamed honey which is a spreadable consistency and is great on toast or biscuits. Other names for creamed honey include whipped or spun honey.
Creamed honey contains no dairy products only raw honey that has undergone the “creamed” process. If nothing is added it’s called Natural.
Lake in the Willows has a line of flavors including Lemon, Lemon Ginger, Cinnamon, and Jalapeño. Seasonal varieties include Chocolate, Pumpkin Spice, and Apple Spice.
Turmeric and Matcha Green Tea are the two we are so excited about. Not only because they taste great but the health benefits are incredible.
Turmeric Creamed Honey
Turmeric Creamed Honey is a power-packed medicinal way to incorporate Turmeric in the diet. Turmeric has been used in India for thousands of years as a spice and medicinal herb.
Lake in the Willows recipe includes added Curcumin, a very strong antioxidant, found in Turmeric. Curcumin only makes up a very small percentage only 3 percent of Turmeric as a whole but has powerful anti-inflammatory effects. A person would have to eat a lot of Turmeric to get the levels of Curcumin in the Creamed Honey.
While curcumin is inefficiently absorbed into the bloodstream there is a way to increase the ability of the body to utilize it. Eat it with black pepper which contains piperine. I like to put the Turmeric Creamed honey in my coffee of the morning and eat it with an avocado with crushed black pepper. An easy way to get piperine is to take, Bioperine, a supplement that can be found at most retailers.
Most notably Turmeric has been linked to having powerful anti-cancer properties. Cancer is a disease that is very dear to our hearts having lost Larry McGee to it.
Another really neat claim is that it may work as a natural pain reliever especially with arthritis issues and even is said to aid in the detoxification of the body.
Turmeric Creamed Honey is really easy to use and incorporate. Bob Wayne of Wayne Plantations has a great recipe, see below, for Salad dressing with his Sunflower Oil and Raw Honey, we substitute Turmeric Creamed Honey for the raw and it’s wonderful. The most common way to use it is to dissolve it in a hot drink like coffee or tea. There is no limit to the ways of using the honey, even mixing some with rice gives the yellow color of many Indian cuisines with a sweet flavor.
Sunflower Oil Vinaigrette
½ Cup – Sunflower Oil
3 Tbsp – Raw Apple Cider Vinegar
2 Tbsp – Raw Local Honey or Turmeric Creamed Honey
1 tsp – Dijon Mustard
Ground Black Pepper & Sea Salt for taste – Consider Fennel & Fire’s Pink and Pink!
Wisk or high-speed blend
Makes 6 oz.

Matcha Green Tea Creamed Honey
Matcha and other green teas are from the same plant. The main difference is the process in which it is cultivated. Before harvesting, the tea leaves in the tea farmers will shade the plants. Shading the tea leaves increase the chlorophyll level which helps matcha get that vibrant green color and in higher concentrations compared to other green teas.
Chlorophyll is a green pigment present in plants and gives Matcha its color. Its primary function is to absorb light and convert this light energy into a usable form for photosynthesis.
As part of the human diet, chlorophyll is full of vitamins including A, C, E, K, and beta-carotene. Chlorophyll is packed with antioxidants and supplies minerals such as magnesium, potassium, iron and calcium.
Matcha Creamed Honey has a really nice taste eaten by itself especially for anyone who loves green tea. Adding it to tea is the most common way many are using it but putting a dab on crackers or toast is a great morning addition or snack.
